SPLIT PEA SOUP

2 cups dried split peas (carefully picked)

smoked beef sausage

salt and pepper to taste

Cook split peas in a saucepan about 3/4 full of water. Add to

the peas pieces of sliced smoked sausage, amount perfered. Let

simmer about three hours, adding water as the peas boils down.

When done, strain; In frying pan put two tablespoons of butter

with one tablespoon flour, fry til golden brown. Add some of the

strained peas to the flour mixture and stir until smooth, then

add all together and season to taste. Can be served with

croutons.
